Ingredients

  • 3 tablespoons olive oil, sunflower oil, ghee, or clarified butter
  • 3/4 teaspoon fine sea salt
  • 4 large leeks, trimmed and thinly sliced*
  • 3/4 teaspoon red pepper flakes, or more to taste
  • 3/4 teaspoon cumin seeds, lightly crushed
  • 1/4 teaspoon ground turmeric
  • 3/4 teaspoon dried oregano*
  • 40 fresh mint leaves*
  • 4 to 5 large handfuls of spinach, roughly chopped*
  • 1 lemon, cut into wedges
  • 1/2 cup walnuts
  • 1/2 cup crumbled feta, ricotta, or paneer (optional)

*Leeks, oregano, mint, and spinach can be grown indoors year‑round using your LED grow setup.

Directions

  1. Preheat oven to 350°F. Spread walnuts in a single layer on a sheet pan and toast for 7‑10 minutes until fragrant. Set aside.
  2. In a large skillet over medium‑high heat, warm the oil. Add salt and sliced leeks; cook until tender and just beginning to brown (about 7‑10 minutes).
  3. Stir in chile flakes, cumin seeds, turmeric, and oregano; cook until aromatic (~30 seconds).
  4. Add mint leaves and spinach (in batches if necessary), stirring constantly until the spinach just begins to wilt and brightens (~1 minute)
  5. Squeeze in the juice of one lemon wedge, stir, taste, and adjust seasoning if needed.
  6. Serve warm, topped with toasted walnuts and crumbled cheese.
